If you go to Reporting > Reports > Attendance > Custom Attendance Report. This report will allow you to either choose an ethnicity and see the attendance just for that ethnicity, group students by "student" to see names.
Or you can choose to group students by "Ethnicity" and see all ethnicities figures on one report for comparing.
