What do I do if I have a student profile with 2 x UPN's?

If a student has two UPNs you would need to get advice from your Local Authority as to which one to keep.

If the student has come from another school, you could also check with their previous school which UPN they used if they still have that information.

If needed, you can update the UPN by opening the student profile > Extended tab > Scroll down to School Information and update the UPN field.
